I think it would probably be better served on rice. The noodles just seem weird to me.

@LittleTexas : Too mixy? Cilantro adds a nice flavor. However, I have since learned cilantro is a hit or miss. One of the boys does not like cilantro at all, even though I've made this dish multiple times. Apparently cilantro can taste soapy for some, while others a experiencr a citrus flavor.
