@Weathergirl5 : Roasts are so easy to do, great for week items if u get home at a reasonable time, or if someone is home earlier to put roast in oven

What is on your menu for tonight?

@Weathergirl5 : I'm just munching my way through the evening. So far: 4 mandarin oranges, peanuts (dry roasted and unsalted), and a Beauregard sweet potato sprinkled with cinnamon. Salad will be soon.

We made a roast earlier today, so leftover roast beef sandwiches with spicy mustard on sourdough bread.

@donnatella : That's kinda what I'm having, but w/ noodles & mushrooms in marsala wine. Took a ride south today & treated myself to a wedge of pate de foie gras today @ Central market. Forgive me Father for I have sinned (& will definitely do it again)!

@Weathergirl5 : Looks delicious! I'm not having dinner. Been having a bout with Diverticulitis since yesterday. Pain, low grade fever., chills. If it gets much worse I'll head to the Doc in the Box up by Kroger.

Teriyaki oven roasted salmon in the cast iron skillet; oven roasted asparagus with grated parmesan and sunflower seeds; spring green salad with raspberries, tomatoes, parmesan cheese and raspberry walnut vinaigrette.

@SandyKnee : Nice! I should've thought about brussels sprouts. Broccoli wasn't my first choice but I needed a vegetable to roast and I didn't want potatoes.

@Jonn : I really like steelhead. It's very similar to salmon but I think it's milder than salmon. If you haven't tried it try some. HEB has it most of the time.

@Jonn : Nice! I actually prefer to have a bigger lunch and just snack at dinner. It very rarely happens that way though.

@yodacat : Very true. I will prep it the morning of and have my mom put it in around lunchtime. Then it will simmer until we eat. It always makes enough for leftovers too which is another reason I like it.
