Sea scallops
Shrimp
2 cloves garlic, minced
3 stalks green onions, sliced, green and white parts separated
1 carrot, cut in 2 inch lengths, julienned
1/4 cup green beans, cut in 1 inch lengths
1/4 cup green peas
2 eggs, whisked
4-5 cups cold cooked white rice
2 teaspoons soy sauce
Salt and pepper to taste
3 Tablespoons oil
- Heat pan over high heat. Add oil.
- Sear scallops and shrimp and set aside.
- In same pan, add white part of onion and garlic and cook until translucent.
- Add carrots, green beans and peas and cook until slightly soft.
- Add rice and stir fry.
- Season with soy sauce.
- Make a well in the center and add eggs. Stir eggs until cooked then incorporate into rice.
- Return seafood to pan and mix altogether.
- Adjust seasoning with salt and pepper.
- Garnish with green part of onion.
