@seanm2: i only smoke baby backs. I first remove the membrane, apply my rub, wrap them in foil and refrigerate them over night. While my smokers temperature is leveling off to about 225-250 degrees my ribs are setting out. I cook them in the foil, meat side down for about 1 hour, then open the foil, flip them over and smoke them another 3 hours. Every 30-45 minutes while they're cooking I will spray them with apple juice so they don't dry out. I don't apply any bbq sauce until about 20 minutes before taking them off my pit and I let them rest (covered )30 minutes or so before slicing and serving. They're always very tender and tasty!
