Maver1ck : Not sure but it's lighter and supposedly healthier.
 
@Jonn : ok, thanks...I thought someone might pop in here and tell me the olives were only picked by Italian fingers, hah. I like most things Italian, great culture that can really cook!!!

TEXASGIRLMAMMA : The information that you provided is fascinating as well. I believe that you are spot on with a conclusion that olive oil can possibly lower cholesterol levels. I believe we are going to start eating less butter and more olive oil starting today. Thank you too for the kind of boost!!!
 
@Maver1ck : Here is a link to the recipe I use to make my spreadable butter. I use my mixer and I put the butter in glass containers with lids and store it in my fridge. I use extra virgin olive oil. Sometimes, I use half avocado or canola oil if I want a lighter taste. These oils do not have as strong of a taste as olive oil does. When I make Italian food I make a dip to dip our bread in. It's kinda like what you would be served at Carrabba's only not as salty! I also use olive oil in my pan to saute stuff. These are good ways to add olive oil to your diet.

Jonn : What's the difference between the cheaper olive oil and extra virgin olive oil? Is it purity or has something been removed from one or the other? I apologize for being dumb on this I honestly don't know I've seen both of them though on the shelves of the grocery store. Thank you too for the kind boost!

Extra-virgin olive oil is made from the first cold pressing and contains the least amount of fatty acids (1%). It's the most fruity tasting and most expensive of the oils.
Olive oil or pure olive oil is a combination of refined olive oil and extra-virgin. "Refined" means that the oil has undergone additional processing to neutralize any defects in taste, aroma or acidity.
Light and extra-light olive oils have the same monounsaturated fat and caloric content as olive oil. Here, "light" means the blend of refined and extra virgin oils leans heavily toward refined, so the color, aroma and flavor are lighter relative to the other olive oils.

@TEXASGIRLMAMMA : If am baking in the oven I also use olive oil to line the pans or glass pans with. It works great to help non stick!

@Maver1ck : I think you have to be careful with high heats with olive oils. Not sure if true but I read that somewhere.
