I have about 4 bell pepper plants that are full of peppers I need to use. One of my plants was so top heavy it broke in half.

I was thinking chicken stir fry, beef pepper steak, and stuffed bell peppers. Any other ideas?

I take bell pepers, egg plant , onions , garlic, salt & pepper & dice everything up in large chunks drizzle with olive oil & bake at 350 degrees for about 45 minutes . This is a really yummy side dish for everything. Sometimes I add zuchinni or yellow squash too .

Not a bell pepper fan, I'm more along the lines of pablano jalapeno and the like. 
But stuffed or pepper beef stir fry, gumbo, jambalaya

You can also chop up bell-peppers and put them in the freezer for later use.  Just use a freezer bag and squeeze most of the air out of the bag.

I love stuffed bell-peppers!

I have a simple one my son LOVES!

cut from plant
cut in strips
enjoy!

best part is there will be no dishes to wash!

...how cool is that!

Italian sausage spicey, split and grilled with.....
sliced bell peppers
chopped onion
mushrooms
and minced garlic using white wine, olive oil and butter...........
 
Find a nice bread aka roll, split and lightly grilled with the garlic butter sauce
 
Heat up your homemade or favorite marinara sauce................
 
Drop the sausage halves into your roll, cover with marinara, drop in the grilled veggies and cover it with two slices of provelone cheese.
 
Under the broiler it goes until the cheese is melted and starts getting those brown spots...
 
The Godfather italian hoggie..........................

My mom always made a stuffed pepper casserole.  Instead of stuffing the actual pepper, she chopped them and just mixed them together with the stuffing and threw it in the oven topped with cheese.

Grilling bell peppers brings out the sweetness as with onions.  Try using them in smaller bits but dont cook them mushy.
