Egg salad sandwich?

I am boiling some eggs right now and thought I would attempt to make some. What ingredients do u like in egg salad?

I was thinking this looked good:
6 eggs, hard-boiled
1/3 cup chives, finely chopped
Salt and pepper
1/3 cup mayonnaise
2 teaspoon white wine vinegar
2 teaspoon dijon mustard

I just wing it. My mom taught me when I was a kid & I just do mostly mayo, some mustard, garlic salt, and lots of pepper (I like pepper.) your recipe sounds good too.

kenny loves egg salad...but i don't like it because it makes my house smell like i giant fart. but when i do make it for him i use eggs, mayo, yellow mustard, pickles, onions, salt and pepper.

I wing it also.
eggs and mayo dah.
Finely chopped onion, preferably sweet or red.
Little garlic powder, little cayenne pepper for heat.

You should try making it with scrambled eggs once to see if you like that.
Cheese scrambled eggs, hummm, never tried that.

i used 3 boiled eggs
2 tbsp mayo
1 tsp dijon mustard
chopped green onion
salt
lots of black pepper
dash of hot sauce
little squezze of lemon juice

served it on toasted bread

its good.  yes, my house smells like boiled eggs now or farts

That is why i didn't add pickle relish.  My dh makes his with it, but i don't care for it that way.

Sprinkle a little paprika...mainly for appearance..But does add a bit of an interesting spice.

I got 3 sandwiches from making egg salad out of 4 boiled eggs. That is super economical! I am going to make them more often. Much cheaper than deli meat.
